Food Friday: Greek Salad and Plantation Party Punch

With the holiday weekend kicking off, here are a few #FoodFriday recipes from “The Cookbook According to St. Paul’s.

We recently rediscovered this great 1979 cookbook created by the The Paulist Women’s Club* at St. Paul the Apostle Catholic Community, the parish served by Paulist Fathers in Los Angeles,

These recipes would be perfect for a BBQ. Have a wonderful and safe 4th of July weekend!

Greek Summer Salad
Ingredients:
5 tomatoes, cut into wedges
¼ lb. feta cheese
Capers, to taste
Greek black olives
Olive oil
Salt and pepper, to taste

Instructions:
Place cut tomatoes in bowl. Crumble cheese, and caper and olives. Over all add olive oil, salt, and pepper to taste. Serves four to five people.

Plantation Party Punch
Ingredients:
2      46 oz. cans of pineapple juice
4      6 oz. cans frozen orange juice
3      6 oz. cans frozen lemonade
1       6 oz. can frozen limeade
4 quarts ginger ale, chilled
2 quarts sparkling water, chilled

Instructions:
Combine first four ingredients, adding just enough water to rinse out each frozen juice can. Add ginger ale and sparkling water when ready to serve. Pour into punch bowl over block of ice or over fancy ice mold. Serves 75.
